Quinoa is a seed that is native to the Andes Mountain. Along with potatoes, it was a staple crop for the Incans. Although it has been cultivated for over 5,000 years, it is only in the last decade or so that its popularity spread to other parts of the world.
Because of this, most of us didn’t grow up making recipes for quinoa grain.
If you have never tried quinoa recipes before, you are in for an amazing treat. Quinoa is light and fluffy and tastes slightly nutty. The flavor is not strong which means it adapts well to most any type of dish that you try. It is fantastic for breakfast, lunch, dinner, snacks or desserts.

Here, I thought I would share with you a simple recipe for an Orange Mint and Quinoa Salad.
Orange Mint Quinoa Salad
3 oranges, peeled and cut, juices reserved
1 cup blueberries
½ cup pomegranate seeds
1 cup cooked quinoa
½ cup feta (optional)
½ red onion, sliced thin
¼ cup mint, chopped fine
2 T lemon juice
¼ cup olive oil
1 T Dijon mustard
1. Combine oranges, blueberries, pomegranate, quinoa, feta (if using) and onion in a medium bowl.
2. In a small bowl combine reserved orange juice, lemon juice, olive oil and mustard. Stir until well blended. Toss with salad and serve.
